The China Health and Nutrition Survey (CHNS) is a joint project, sponsored by the Institute of Nutrition and Food Hygiene, Chinese Academy of Preventive Medicine(INFH,CAPM) and the Carolina Population Center, University of North Carolina at Chapel Hill (CPC UNC). It invided three rounds of data collection.The first was carried out in late 1989, and the other two were done in 1991 and 1993 respectively. The objective of this project was longitudinal research of food supply, food consumption, demographic change and health services, which would eventually affect the nutrition status of Chinese under the sweeping reforms in the structure of China economy. The result showed that changes in dietary pattern flooring the Economic development. The intake of cereals decreased from 1989 to 1991. The per capita intake of animal food increreased, 34g per day in urban, 13g and 18g in suburban and county town respectively; and only 5g in rural. The current diet has met the goals for year 2000 in urban, but there are big gap in suburban, county and rural areas.The dietary intake of children was far from the dietary goal of 2000.The protein share of beans and animal food accounted for only 26%to 30%of the total, and inadequate intakes of calcium, vitamin A and riboflavin are conmmonly seen. Fat intake was higher in high income group.
